Zucchini & Peppers On The Stove

This recipe reminds me of my grandpa’s basement, the smell of sauteed onions and salt used to hang in the air. This heavier recipe is great for a fall night.
Zucchini & Peppers On The Stove

Ingredients
- 1 pound zucchini or yellow squash
- 1 onion, sliced thin
- 1 bell pepper
- 2 tablespoons olive oil
- 3 cloves of garlic
- 1/2 tsp salt
- pinch of pepper
- 2 tomatoes, cut into wedges
Directions
- Cut zucchini into 1/4 in slices
- Add zucchini, onions, bell pepper, oil, garlic, salt & pepper to warm skillet.
- Cover and cook over medium heat, occasionally stirring until vegetables are crisp but slightly tender. ~ 5-ish min
- Add tomatoes
- Cover and cook on low heat until tomatoes are heated through. ~ 3-ish min.
- Enjoy
