Roasted Beets

Beets are packed with nutrients. This sweet and simple recipe is sure to entice even the pickiest of eaters.

Roasted Beets

Ingredients

  • 1 pound medium fresh beets, peeled
  • 4 tablespoons olive oil
  • 1/2 tsp salt
  • 3-5 ish fresh rosemary sprigs

Directions

  1. Preheat oven to 400 degrees F
  2. After peeling beets, cut each beet into 6 wedges, place in large ziplock bag.
  3. Add olive oil and salt to beets, seal bag and shake to coat.
  4. Wrap beets in tin foil and top with rosemary
  5. Seal foil tightly around beets, you don’t want any air holes.
  6. Bake for 1 1/4 – 1 1/2 hours.
  7. Enjoy
