Beets are packed with nutrients. This sweet and simple recipe is sure to entice even the pickiest of eaters.
Roasted Beets

Ingredients
- 1 pound medium fresh beets, peeled
- 4 tablespoons olive oil
- 1/2 tsp salt
- 3-5 ish fresh rosemary sprigs
Directions
- Preheat oven to 400 degrees F
- After peeling beets, cut each beet into 6 wedges, place in large ziplock bag.
- Add olive oil and salt to beets, seal bag and shake to coat.
- Wrap beets in tin foil and top with rosemary
- Seal foil tightly around beets, you don’t want any air holes.
- Bake for 1 1/4 – 1 1/2 hours.
- Enjoy
