Baked Squash and Apples

Perfect for a brisk fall day. You’ll for sure want to use a vegetable peeler to pare the squash, learn from my mistakes and don’t use a knife.

Baked Squash and Apples

Ingredients

  • 2 pounds butternut squash
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted
  • 1 tbls flour
  • 1/2 tsp nutmeg
  • 2 apples, cored and thinly sliced

Directions

  1. Preheat oven to 350 degrees f.
  2. Cut squash in half, removed seeds, and peel. Cut into 1/2 inch slices.
  3. Mix brown sugar, butter, flour, salt, and nutmeg.
  4. Arrange squash in a large baking dish and top with apple slices.
  5. Sprinkle mixture over top.
  6. Cover with foil and cook 50 – 60 min or until squash is tender.
  7. Enjoy
